Ingredients
5 medium carrots, peeled and chopped
1 small onion, chopped
2 garlic cloves, minced
1 tsp grated fresh ginger
2 cups vegetable broth
1/3 cup coconut cream
1 tbsp olive oil (or coconut oil)
1/2 tsp turmeric powder
1/2 tsp curry powder
Salt and black pepper to taste
Fresh parsley or pumpkin seeds for garnish (optional)
Instructions
Sauté the aromatics: Heat oil in a soup pot over medium heat. Add onion and garlic, cooking until softened. Stir in the ginger, turmeric, and curry powder.
Cook the carrots: Add chopped carrots to the pot and cook for 5 minutes, stirring occasionally.
Simmer: Pour in the vegetable broth, ensuring the carrots are submerged. Bring to a boil, then reduce to a simmer. Cook until the carrots are tender (about 20 minutes).
Blend: Remove the soup from heat and blend using an immersion blender or a countertop blender until smooth.
Add creaminess: Stir in the coconut cream and season with salt and pepper. Return to heat if necessary to warm through.
Serve: Garnish with parsley or pumpkin seeds for added texture and flavor. Serve hot with crusty bread or crackers.
