Ingredients

  • 50 g whole pecans (for topping)

  • 90 g dark chocolate chips (vegan)

  • 240 ml maple syrup

  • 120 ml almond milk (unsweetened)

  • 50 g coconut sugar

  • 2 tbsp (16 g) cornstarch

  • 2 tbsp (30 ml) coconut oil, melted

  • 1 tsp vanilla extract

  • ¼ tsp salt

Instructions

1. Prepare the crust:

  1. In a bowl, mix the flour and salt.

  2. Add solid coconut oil and mix with a fork or pastry cutter until the mixture resembles breadcrumbs.

  3. Add cold water, one tablespoon at a time, mixing until a dough forms.

  4. Roll out the dough and press it into a greased 23 cm pie pan. Trim the edges and refrigerate for 20 minutes.

2. Preheat and blind-bake the crust:

  1. Preheat your oven to 350°F (175°C)

  2. Line the crust with parchment paper, fill with baking weights or dried beans, and bake for 10 minutes.

  3. Remove the weights and bake for an additional 5 minutes.

3. Make the filling:

  1. In a medium saucepan, whisk together almond milk, maple syrup, coconut sugar, cornstarch, melted coconut oil, vanilla extract, and salt over medium heat. Cook until the mixture thickens (about 5-7 minutes).

  2. Remove from heat and stir in the chopped pecans and dark chocolate chips.

4. Assemble and bake the pie:

  1. Pour the filling into the pre-baked crust.

  2. Arrange whole pecans on top for decoration.

  3. Bake for 35-40 minutes, or until the filling is set and the pecans are slightly toasted.

  4. Let cool completely before serving to allow the filling to firm up.
