Vegan Dark Chocolate Pecan Pie Recipe

Pecans and dark chocolate are a match made in heaven for dessert lovers. Pecans, native to North America, offer a rich buttery flavor and are packed with heart-healthy fats, vitamins, and minerals. Ingredients
For the crust:
190 g all-purpose flour (or gluten-free flour blend)
120 g coconut oil (solid, not melted)
2-4 tbsp (30-60 ml) cold water
Pinch of salt
For the filling:
100 g pecans, roughly chopped
50 g whole pecans (for topping)
90 g dark chocolate chips (vegan)
240 ml maple syrup
120 ml almond milk (unsweetened)
50 g coconut sugar
2 tbsp (16 g) cornstarch
2 tbsp (30 ml) coconut oil, melted
1 tsp vanilla extract
¼ tsp salt
Instructions
1. Prepare the crust:
In a bowl, mix the flour and salt.
Add solid coconut oil and mix with a fork or pastry cutter until the mixture resembles breadcrumbs.
Add cold water, one tablespoon at a time, mixing until a dough forms.
Roll out the dough and press it into a greased 23 cm pie pan. Trim the edges and refrigerate for 20 minutes.
2. Preheat and blind-bake the crust:
Preheat your oven to 350°F (175°C)
Line the crust with parchment paper, fill with baking weights or dried beans, and bake for 10 minutes.
Remove the weights and bake for an additional 5 minutes.
3. Make the filling:
In a medium saucepan, whisk together almond milk, maple syrup, coconut sugar, cornstarch, melted coconut oil, vanilla extract, and salt over medium heat. Cook until the mixture thickens (about 5-7 minutes).
Remove from heat and stir in the chopped pecans and dark chocolate chips.
4. Assemble and bake the pie:
Pour the filling into the pre-baked crust.
Arrange whole pecans on top for decoration.
Bake for 35-40 minutes, or until the filling is set and the pecans are slightly toasted.
Let cool completely before serving to allow the filling to firm up.
